Is it just me or have, in the more recent versions, whenever you try to load a character with multiple hair option they load with ALL of their hair options and you have to click away the ones you don't want? it got something to do with that "shift+click to toggle hair aspects" thing? anyone know a way around it?

So the Einzbern hair hats can be toggled on/off? How exactly do you do this? I want to remove the hat but can't figure out how without removing the rest of the hair.

Hold the Shift key and then left-click on the hat to toggle its visibility. If that doesn't seem to work, try to Shift+Click on a different part of the hat.

If it still doesn't work then you may be running a layering-mod or overlay which messes up the click detection. It's possible to manually splice visibility switches into a charcode, but let's hope that such measures aren't necessary :)
